Redolent Wine is collaboration between Jon Larson and Boyd Pearson. Jon Larson takes the lead on the winemaking at Redolent, as he has been a fermenter for decades of everything from grapes and grains to cheese and bread to kimchi and kombucha, never stopping his quest for knowledge about the mystical process of fermentation. Boyd Pearson takes the lead on sales, as he is a veteran salesman in the wine industry and a lifelong student of wine and the business of wine, always seeking to learn and taste more. As much as he loves discovering a new wine, Boyd loves introducing others to memorable wines. Both are equally involved in the tasting and blending for the final wines. And in reality, with every responsibility falling at the feet of the two of them, their exact roles are hard to fully define. There’s so much overlap. They both do a little bit of everything. So, they came up with the titles of Jon Larson as the "Overseer of Ferments" and Boyd Pearson as the "Cupbearer."
They relish the journey wine offers and bring all of their experiences to the table to collaborate on every wine they make. They continue to push each other through experimentation to try and produce both wines redolent of place and wines redolent of pleasure.
They continue to produce wine at the GC Wines facility in Amity, Ore., and when it comes to winemaking for Redolent Wine, they strive to simply be stewards of the metamorphosis from grapes into wine. They aim to abstain from intervening in this process both in the fermentation and aging of the wines. They seek to capture the true nature of the grapes, the place, and the vintage.
